Nous y retournons non seulement pour les anecdotes adorables que raconte Grand-P\u00e8re sur Maxence enfant (d\u00e9j\u00e0 friand d\u2019escargots et de jus d\u2019abricot), mais aussi pour la <b>beaut\u00e9 sublime des paysages<\/b>, les villages accroch\u00e9s aux falaises, les grottes fascinantes et les rivi\u00e8res souterraines, et bien s\u00fbr, la cuisine locale.<\/p>\n<p>Le P\u00e9rigord est un paradis pour les gastronomes, connu pour ses truffes, ses noix, ses fraises, ses c\u00e8pes, ses ch\u00e2taignes, son fromage de ch\u00e8vre (Rocamadour, mon amour) et ses produits issus du canard, foie gras et <b>confit<\/b> en t\u00eate.<\/p>\n<div id=\"attachment_10001\" class=\"wp-caption alignnone\" style=\"width: 100%\"><img loading=\"lazy\" class=\"size-full wp-image-10001\" src=\"https:\/\/cnz.to\/vf\/wp-content\/uploads\/2017\/03\/la_roque_gageac.jpg\" alt=\"La Roque-Gageac\" width=\"760\" height=\"505\" style=\"width:100%\" srcset=\"https:\/\/cnz.to\/vf\/wp-content\/uploads\/2017\/03\/la_roque_gageac.jpg 760w, https:\/\/cnz.to\/vf\/wp-content\/uploads\/2017\/03\/la_roque_gageac-300x200.jpg 300w, https:\/\/cnz.to\/vf\/wp-content\/uploads\/2017\/03\/la_roque_gageac-355x237.jpg 355w\" sizes=\"(max-width: 760px) 100vw, 760px\" \/><p class=\"wp-caption-text\">La Roque-Gageac<\/p><\/div>\n<p><!--more--><\/p>\n<p>Nous nous promenons donc avec bonheur de village en village, et quand l\u2019app\u00e9tit vient, nous partons en qu\u00eate de quelque petite auberge de campagne qui servira un confit de canard maison avec \u2014 sans faillir \u2014 une g\u00e9n\u00e9reuse portion de <b>pommes sarladaises<\/b> dor\u00e9es et croustillantes. Il s\u2019agit de pommes de terre rissol\u00e9es \u00e0 la graisse de canard, parfois avec des c\u00e8pes ou des champignons, saupoudr\u00e9es pour finir de persil frais et d\u2019ail.<\/p>\n<p><img loading=\"lazy\" class=\"alignnone size-full wp-image-9995\" src=\"https:\/\/cnz.to\/vf\/wp-content\/uploads\/2017\/03\/potatoes_sarladaises-3.jpg\" alt=\"\u201cPommes\" width=\"760\" height=\"1139\" style=\"width:100%\" srcset=\"https:\/\/cnz.to\/vf\/wp-content\/uploads\/2017\/03\/potatoes_sarladaises-3.jpg 760w, https:\/\/cnz.to\/vf\/wp-content\/uploads\/2017\/03\/potatoes_sarladaises-3-200x300.jpg 200w, https:\/\/cnz.to\/vf\/wp-content\/uploads\/2017\/03\/potatoes_sarladaises-3-507x760.jpg 507w\" sizes=\"(max-width: 760px) 100vw, 760px\" \/><\/p>\n<p>Les pommes de terre \u00e0 la sarladaise sont un <b>d\u00e9lice absolu<\/b>, le go\u00fbt de noisette du tubercule sublim\u00e9 par le velours de la graisse de canard, contraste magnifique entre le coeur fondant et les bords brunis.<\/p>\n<p>Vous pouvez m&rsquo;en servir \u00e0 <b>n&rsquo;importe quel moment de l&rsquo;ann\u00e9e<\/b>, je les mangerai. Mais ce d\u00e9but de printemps se pr\u00eate particuli\u00e8rement bien \u00e0 les pr\u00e9parer. (35 grammes) de <b>graisse de canard<\/b> ou d'oie\r<\/li><li id=\"zlrecipe-ingredient-2\" class=\"ingredient\" itemprop=\"ingredients\">1 c.c. de <b>sel<\/b> de mer fin\r<\/li><li id=\"zlrecipe-ingredient-3\" class=\"ingredient\" itemprop=\"ingredients\">2 gousses d'<b>ail<\/b> hach\u00e9es finement\r<\/li><li id=\"zlrecipe-ingredient-4\" class=\"ingredient\" itemprop=\"ingredients\"><b>Persil<\/b> plat hach\u00e9 finement\r<\/li><li id=\"zlrecipe-ingredient-5\" class=\"ingredient\" itemprop=\"ingredients\"><B>Poivre<\/b> noir fra\u00eechement moulu<\/li><\/ul><p id=\"zlrecipe-instructions\" class=\"h-4 strong\">Instructions<\/p><ol id=\"zlrecipe-instructions-list\" class=\"instructions\"><li id=\"zlrecipe-instruction-0\" class=\"instruction\" itemprop=\"recipeInstructions\">\u00c9pluchez les pommes de terre et coupez-les en tranches de 5 mm ; \u00e0 la <a href=\"http:\/\/www.amazon.fr\/dp\/B00032RZNK?tag=chocolzucchi-21\">mandoline<\/a>, on gagne du temps. Rincez bien dans une passoire pour retirer l\u2019exc\u00e9dent d\u2019amidon, \u00e9gouttez et s\u00e9chez soigneusement dans un torchon propre.\r<\/li><li id=\"zlrecipe-instruction-1\" class=\"instruction\" itemprop=\"recipeInstructions\">Dans une grande po\u00eale \u00e0 fond \u00e9pais, <a href=\"http:\/\/www.amazon.fr\/dp\/B00006JSUA?tag=chocolzucchi-21\">en fonte<\/a> par exemple, chauffez la graisse de canard sur feu moyen.\r<\/li><li id=\"zlrecipe-instruction-2\" class=\"instruction\" itemprop=\"recipeInstructions\">Ajoutez les pommes de terre et le sel, remuez bien pour enrober et faites cuire \u00e0 d\u00e9couvert 4 \u00e0 5 minutes sans y toucher, jusqu'\u00e0 ce que les pommes de terre soient dor\u00e9es en dessous. (J\u2019utilise un <a href=\"http:\/\/www.amazon.fr\/dp\/B000VH4R0Q?tag=chocolzucchi-21\">couvercle anti-projection<\/a> pour \u00e9viter d\u2019en avoir partout sur mes plaques de cuisson.) Ajustez le feu de telle sorte que les pommes de terre dorent sans br\u00fbler.\r<\/li><li id=\"zlrecipe-instruction-3\" class=\"instruction\" itemprop=\"recipeInstructions\">Retournez les pommes de terre (j'utilise avec bonheur mes <a href=\"http:\/\/shrsl.com\/?~64rt\">spatules plates Earlywood<\/a>), et faites cuire 4 \u00e0 5 minutes de plus, toujours sans y toucher, jusqu'\u00e0 ce qu\u2019elles soient dor\u00e9es en dessous.
