Je suis en contact avec le tr\u00e8s sympathique fondateur, Fr\u00e9d\u00e9ric Marr, depuis des ann\u00e9es, et r\u00e9cemment j&rsquo;ai enfin eu l&rsquo;occasion de me rendre dans leur atelier. Mais le conchage \u00e9l\u00e8ve la temp\u00e9rature du chocolat et ici on pr\u00e9f\u00e8re garder un peu de texture, donc <strong>pas de conchage<\/strong>.<\/p>\n<p>Pendant que le chocolat est encore dans la meule, on ajoute le sucrant (suce de coco, sucre de canne, sirop d&rsquo;agave) et certains des <strong>ingr\u00e9dients aromatiques<\/strong> ; d&rsquo;autres seront ajout\u00e9s plus tard, au moment du temp\u00e9rage.<\/p>\n<p>Le chocolat est alors transf\u00e9r\u00e9 dans la <strong>temp\u00e9reuse<\/strong> qui fera suivre au chocolat une courbe de temp\u00e9rature pr\u00e9cise lui permettant de se solidifier avec une texture et une finition impeccables.<\/p>\n<div id=\"attachment_7933\" class=\"wp-caption aligncenter\" style=\"width: 100%\"><img loading=\"lazy\" class=\"size-full wp-image-7933\" src=\"https:\/\/cnz.to\/vf\/wp-content\/uploads\/2016\/03\/rrraw_tempering.jpg\" alt=\"Temp\u00e9rage du chocolat.
