Lui et sa compagne Laura Adrian ont ferm\u00e9 HK il y a un an et demi, pour ouvrir leur propre restaurant &#8212; officiel cette fois &#8212; appel\u00e9 <a href=\"http:\/\/hkmenus.com\">Verjus<\/a>.<\/p>\n<p>Braden et moi sommes amis depuis bient\u00f4t six ans, ce qui m&rsquo;a mise dans la position enviable de pouvoir go\u00fbter sa cuisine et m\u00eame de cuisiner \u00e0 ses c\u00f4t\u00e9s un certain nombre de fois. Il ne manque jamais de m&rsquo;impressionner par la vitalit\u00e9 et l&rsquo;espi\u00e8glerie de ses plats, et quoiqu&rsquo;ils soient trop compliqu\u00e9s pour que je tente de les refaire chez moi &#8212; comme chez beaucoup de chefs, une demi-douzaine de pr\u00e9parations diff\u00e9rentes rentrent dans l&rsquo;\u00e9laboration d&rsquo;une seule assiette &#8212; je quitte toujours sa table avec plein d&rsquo;<b>id\u00e9es inspirantes<\/b> \u00e0 noter dans mon petit carnet.<\/p>\n<blockquote class=\"pullquote alignright\">\n<p>\t\t\t\u00c7a fait beaucoup de bruit et au d\u00e9but \u00e7a donne une sorte de neige fondue peu engageante, mais si on ne se laisse pas d\u00e9courager, on obtient un sorbet lisse et cr\u00e9meux que l&rsquo;on peut servir imm\u00e9diatement.\n\t\t<\/p><\/blockquote>\n<p>Il y a quelques semaines, Maxence et moi \u00e9tions invit\u00e9s avec huit autres amis \u00e0 inaugurer la nouvelle <b>table du chef<\/b> de Verjus, situ\u00e9e au dernier \u00e9tage du restaurant, dans une jolie salle qui accueille aussi la collection de livres de cuisine du couple, et offre une large vue sur les incroyables escaliers ext\u00e9rieurs du <a href=\"http:\/\/theatrepalaisroyal.com\/\">Th\u00e9\u00e2tre du Palais-Royal<\/a> de l&rsquo;autre c\u00f4t\u00e9 de la rue.<\/p>\n<p>Braden nous a servi un <strong>menu d\u00e9gustation<\/strong> compos\u00e9 des nouveaux plats qu&rsquo;il venait juste de finir de d\u00e9velopper, mon pr\u00e9f\u00e9r\u00e9 \u00e9tant l&rsquo;oeuf \u00e0 basse temp\u00e9rature servi avec de la polenta, de la laitue fris\u00e9e et des salsifis, saupoudr\u00e9s d&rsquo;une chapelure de pumpernickel et de kimchi maison.<\/p>\n<p>Et pour le dessert, Cassie Choi la chef p\u00e2tissi\u00e8re, une Am\u00e9ricaine d&rsquo;origine cor\u00e9enne venant de Los Angeles, nous a propos\u00e9 trois desserts inspir\u00e9s des grands classiques am\u00e9ricains : elle a ainsi r\u00e9interpr\u00e9t\u00e9 la tarte aux noix de p\u00e9can, la tarte au citron meringu\u00e9e et le <b>banana split<\/b>, qui a pris la forme d&rsquo;une mousse glac\u00e9e au chocolat avec une sauce au chocolat, des cerises marin\u00e9es et un sorbet \u00e0 la banane.<\/p>\n<p><!--more--><\/p>\n<p>Le <b>sorbet \u00e0 la banane<\/b> \u00e9tait particuli\u00e8rement bon, et quand Braden et Cassie sont mont\u00e9s nous voir \u00e0 la fin du repas, ils nous ont expliqu\u00e9 avec enthousiasme la m\u00e9thode qu&rsquo;ils avaient employ\u00e9e, d&rsquo;apr\u00e8s une astuce trouv\u00e9e sur <a href=\"http:\/\/www.thekitchn.com\/how-to-make-creamy-ice-cream-w-93414\">The Kitchn<\/a> : il s&rsquo;agit de congeler des bananes tr\u00e8s (tr\u00e8s) m\u00fbres et de les passer <a href=\"http:\/\/instagram.com\/p\/VcvG6UsQbZ\/\">au mixeur<\/a>. \u00c7a fait beaucoup de bruit et au d\u00e9but \u00e7a donne une sorte de neige fondue peu engageante, mais si on ne se laisse pas d\u00e9courager (comme souvent dans la vie), les choses prennent meilleure tournure et on obtient un sorbet lisse et cr\u00e9meux que l&rsquo;on peut servir imm\u00e9diatement.<\/p>\n<p>Je me suis soigneusement not\u00e9 l&rsquo;id\u00e9e, et d\u00e8s que j&rsquo;ai eu une <b>banane trop m\u00fbre<\/b> sous la main, je l&rsquo;ai laiss\u00e9e m\u00fbrir encore un peu &#8212; Braden m&rsquo;avait pr\u00e9venue qu&rsquo;il fallait que la peau soit compl\u00e8tement noire pour que ce soit vraiment bon &#8212; et je me suis lanc\u00e9e.
