{"id":3604,"date":"2013-01-22T18:00:00","date_gmt":"2013-01-22T17:00:00","guid":{"rendered":"https:\/\/cnz.to\/vf\/uncategorized\/harengs-pommes-a-lhuile-recette\/"},"modified":"2014-03-25T19:43:26","modified_gmt":"2014-03-25T18:43:26","slug":"harengs-pommes-a-lhuile-recette","status":"publish","type":"post","link":"https:\/\/cnz.to\/vf\/recettes\/salades\/harengs-pommes-a-lhuile-recette\/","title":{"rendered":"Harengs pommes \u00e0 l&rsquo;huile Recette"},"content":{"rendered":"<p>Le \u00ab\u00a0hareng pommes \u00e0 l&rsquo;huile\u00a0\u00bb est un grand <b>classique<\/b> parmi les hors-d&rsquo;oeuvres fran\u00e7ais, et on en trouve encore de temps en temps au menu des brasseries et des bistros traditis, ou n\u00e9o-tradis.<\/p>\n<p>{J&rsquo;en profite pour citer le remarquable projet du labo de recherche de la New York Public Library : <a href=\"http:\/\/menus.nypl.org\/\">What&rsquo;s on the menu?<\/a> est une collection num\u00e9ris\u00e9e de cartes de restaurant qui remonte aux ann\u00e9es 1850, et nos <i>harengs pommes \u00e0 l&rsquo;huile<\/i> y apparaissent un certain nombre de fois.}<\/p>\n<p>On comprend sans mal ce qui fait que <b>le m\u00e9lange<\/b> fonctionne si bien : la force du hareng, sal\u00e9 et fum\u00e9, est temp\u00e9r\u00e9e par les tranches de pomme de terre, douces et encore ti\u00e8des, leurs contours flout\u00e9s par les assauts de la vinaigrette.<\/p>\n<blockquote class=\"pullquote alignright\">\n<p>\t\t\tC&rsquo;est tout ce qu&rsquo;on attend d&rsquo;un plat d&rsquo;hiver : bon pour la sant\u00e9, satisfaisant, avec les notes claires du cerfeuil, et des petites piques gustatives fournies par le jus de citron et l&rsquo;oignon cru.\n\t\t<\/p><\/blockquote>\n<p>Et c&rsquo;est tout ce qu&rsquo;on attend d&rsquo;un <b>plat d&rsquo;hiver<\/b> : bon pour la sant\u00e9 (le hareng est un poisson gras qui apporte des om\u00e9gas 3 mais peu de mercure), satisfaisant (le pouvoir de sati\u00e9t\u00e9 de la pomme de terre), avec les notes claires du cerfeuil, et des petites piques gustatives fournies par le jus de citron et l&rsquo;oignon cru. C&rsquo;est aussi un plat rapide \u00e0 pr\u00e9parer et peu co\u00fbteux, ce dont personne ne se plaindra.<\/p>\n<p>Le <b>hareng fum\u00e9<\/b> que vous utiliserez doit \u00eatre un peu sal\u00e9 &#8212; c&rsquo;est sa nature &#8212; mais pas trop non plus. Go\u00fbtez-en un petit morceau : si c&rsquo;est agr\u00e9ablement sal\u00e9, vous pouvez l&rsquo;utiliser tel quel. Si \u00e7a vous para\u00eet vraiment trop sal\u00e9, faites tremper le hareng toute une nuit dans du lait ou de l&rsquo;eau, en pla\u00e7ant id\u00e9alement les filets sur une petite grille ou dans une passoire, pour \u00e9viter qu&rsquo;ils touchent le fond du r\u00e9cipient car c&rsquo;est l\u00e0 que l&rsquo;exc\u00e8s de sel se d\u00e9posera. Egouttez, rincez, et essuyez bien.<\/p>\n<p>On peut faire <b>plein d&rsquo;autres choses<\/b> avec du hareng fum\u00e9, comme des rillettes, un <a href=\"https:\/\/cnz.to\/archives\/2005\/04\/smoked_herring_and_broccoli_parmentier.php\" target=\"_self\">parmentier au brocoli<\/a>, ou des <a href=\"http:\/\/www.aliyaleekong.com\/smoked-herring-croquettes\/\">croquettes<\/a>. Laissez reposer pour adoucir l'oignon.\r<\/li><li id=\"zlrecipe-instruction-1\" class=\"instruction\" itemprop=\"recipeInstructions\">Mettez les pommes de terre dans une casserole d'eau non sal\u00e9e. Couvrez, amenez \u00e0 \u00e9bullition, et laissez fr\u00e9mir 12 minutes, jusqu'\u00e0 ce que les pommes de terre soient fondantes (testez de la pointe du couteau). Egouttez et laissez reposer jusqu'\u00e0 ce que vous puissiez les toucher sans vous br\u00fbler. D\u00e9coupez en tranches d'1,5 cm.\r<\/li><li id=\"zlrecipe-instruction-2\" class=\"instruction\" itemprop=\"recipeInstructions\">Ajoutez l'huile d'olive dans le saladier en \u00e9mulsionnant, puis les pommes de terre, et m\u00e9langez bien. Incorporez le poisson et les herbes en tournant d\u00e9licatement.
