Lorsque j&rsquo;ai appris \u00e7a, j&rsquo;ai r\u00e9alis\u00e9 qu&rsquo;elle n&rsquo;avait que quelques mois de moins que ma grand-m\u00e8re, qui a eu un si\u00e8cle \u00e0 l&rsquo;automne dernier et nous a quitt\u00e9s au printemps.<\/p>\n<p>En regardant la biographie de Julia Child, j&rsquo;ai vu qu&rsquo;elles avaient toutes les deux v\u00e9cu \u00e0 Paris pendant les m\u00eames ann\u00e9es, et comme <b>ma grand-m\u00e8re<\/b> \u00e9tait une cuisini\u00e8re enthousiaste elle aussi, j&rsquo;ai plaisir \u00e0 imaginer qu&rsquo;elles pourraient s&rsquo;\u00eatre crois\u00e9es un jour, devant un \u00e9tal de march\u00e9 ou peut-\u00eatre chez <a href=\"https:\/\/cnz.to\/archives\/2003\/10\/the_magic_bakers_store.php\" target=\"_self\">G.Detou<\/a>.<\/p>\n<p>Bien que je poss\u00e8de dans ma biblioth\u00e8que le monumental <a href=\"http:\/\/www.amazon.fr\/dp\/0375413405?tag=chocolzucchi-21\">Mastering the Art of French Cooking<\/a> de Julia Child, je m&rsquo;en sers essentiellement comme ouvrage de r\u00e9f\u00e9rence, mais c&rsquo;est gr\u00e2ce \u00e0 lui que j&rsquo;ai d\u00e9couvert le concept des <b>concombres au four<\/b>.<\/p>\n<p>Avant \u00e7a, dans mon esprit, le concombre \u00e9tait fermement camp\u00e9 au pays des <b>crudit\u00e9s<\/b>, et je mettais plut\u00f4t en avant son croquant rafra\u00eechissant sous la forme de b\u00e2tonnets pour accompagner un dip \u00e0 l&rsquo;ap\u00e9ro, en tranches fines pour une salade japonisante, ou r\u00e2p\u00e9 dans le tzatziki. J&rsquo;\u00e9tais donc intrigu\u00e9e par les <i>concombres au beurre<\/i>* de Julia Child, une pr\u00e9paration inconnue \u00e0 mon bataillon.<\/p>\n<p>Pour cette recette, elle \u00e9pluche les concombres, les coupe en tron\u00e7ons, les fait d\u00e9gorger avec du sel, du sucre et du vinaigre, puis les fait <b>cuire au four<\/b> avec du beurre, des oignons nouveaux et des herbes. (Vous trouverez ici <a href=\"http:\/\/blogs.kcrw.com\/goodfood\/2012\/03\/vegetarian-recipe-baked-cucumbers\/\">le proc\u00e9d\u00e9 d\u00e9taill\u00e9<\/a>.)<\/p>\n<p>Je dois avouer que je n&rsquo;ai jamais suivi la recette telle qu&rsquo;elle est \u00e9crite, mais elle m&rsquo;a inspir\u00e9 la version ci-dessous, avec des proportions un peu diff\u00e9rentes, de l&rsquo;huile d&rsquo;olive \u00e0 la place du beurre, des herbes ajout\u00e9es seulement au moment de servir, et des petits <b>navets roses<\/b> qui s&rsquo;invitent dans le plat.<\/p>\n<p>Le r\u00e9sultat est absolument r\u00e9jouissant, et nous nous en sommes souvent r\u00e9gal\u00e9s cet \u00e9t\u00e9 : une fois cuits au four, les concombres prennent une texture \u00e9tonnament <b>soyeuse<\/b> et fondante, et leur douceur r\u00e9pond parfaitement \u00e0 l&rsquo;amertume subtile des navets.<\/p>\n<p><b>Et vous<\/b>, avez-vous d\u00e9j\u00e0 pr\u00e9par\u00e9 des concombres cuits ? Coupez-les en deux dans la longueur, et creusez le coeur \u00e0 la petite cuill\u00e8re pour retirer les graines (je mets celles-ci de c\u00f4t\u00e9 dans un petit bol et je les mange saupoudr\u00e9es d'une bonne dose de gomasio). Coupez chaque moiti\u00e9 en 3 ou 4 morceaux longs et fins, puis en tron\u00e7ons d'environ 4 cm de longueur.\r<\/li><li id=\"zlrecipe-instruction-1\" class=\"instruction\" itemprop=\"recipeInstructions\">Mettez-les dans un bol avec 1 c.c. de sel et m\u00e9langez. Laissez d\u00e9gorger 30 minutes. Transf\u00e9rez dans un torchon propre, en laissant le jus au fond du bol, et \u00e9pongez bien.\r<\/li><li id=\"zlrecipe-instruction-2\" class=\"instruction\" itemprop=\"recipeInstructions\">Pr\u00e9chauffez le four \u00e0 190\u00b0C.\r<\/li><li id=\"zlrecipe-instruction-3\" class=\"instruction\" itemprop=\"recipeInstructions\">Dans un plat \u00e0 four de taille moyenne, m\u00e9langez les morceaux de concombre et de navet. Ajoutez 1\/2 c.c. de sel, le sucre, le vinaigre, et un bon filet d'huile d'olive. M\u00e9langez bien.\r<\/li><li id=\"zlrecipe-instruction-4\" class=\"instruction\" itemprop=\"recipeInstructions\">Faites cuire au four 30 minutes, jusqu'\u00e0 ce que les l\u00e9gumes soient dor\u00e9s par endroits. Saupoudrez de poivre noir et d'aneth si vous en avez, puis servez chaud.
