La recette traditionnelle des galettes de sarrasin n&rsquo;utilise que de la farine de sarrasin, de l&rsquo;eau et du sel, et se cuit sur une <a href=\"https:\/\/fr.wikipedia.org\/wiki\/Billig\">billig<\/a>. Mais d&rsquo;apr\u00e8s ma douloureuse exp\u00e9rience, c&rsquo;est pratiquement impossible de cuire une galette 100% sarrasin dans une po\u00eale normale chez soi, donc je vous livre ma recette adapt\u00e9e pour une cuisine maison.<\/p>\n<p><strong>Garnissez<\/strong> les galettes de jambon, de gruy\u00e8re r\u00e2p\u00e9 et d&rsquo;un \u0153uf au plat (le classique in\u00e9galable baptis\u00e9 \u00ab\u00a0la compl\u00e8te\u00a0\u00bb) ; de poireaux et de fromage de ch\u00e8vre ; de tomates fra\u00eeches et de comt\u00e9 ; de truite fum\u00e9e et de cr\u00e8me fra\u00eeche ; de fines tranches d&rsquo;andouille pour faire rire les enfants. Mettez-y les \u0153ufs et battez doucement au centre avec un fouet, jusqu'\u00e0 ce que les \u0153ufs se soient m\u00e9lang\u00e9s avec une partie de la farine. Versez le lait et et l'eau sans cesser de fouetter, jusqu'\u00e0 obtention d'une p\u00e2te homog\u00e8ne.\r<\/li><li id=\"zlrecipe-instruction-1\" class=\"instruction\" itemprop=\"recipeInstructions\">Couvrez le saladier et r\u00e9servez au frais au moins 2 heures, et jusqu'au lendemain si possible.\r<\/li><li id=\"zlrecipe-instruction-2\" class=\"instruction\" itemprop=\"recipeInstructions\">Retirez le bol du r\u00e9frig\u00e9rateur, et m\u00e9langez la p\u00e2te \u00e0 nouveau. Ayez toutes les garnitures pr\u00eates et \u00e0 port\u00e9e de main.\r<\/li><li id=\"zlrecipe-instruction-3\" class=\"instruction\" itemprop=\"recipeInstructions\">Si vous faites plusieurs galettes \u00e0 la suite, pr\u00e9chauffez le four \u00e0 150\u00b0C : vous y tiendrez les galettes au chaud pendant que vous pr\u00e9parerez les autres.\r<\/li><li id=\"zlrecipe-instruction-4\" class=\"instruction\" itemprop=\"recipeInstructions\">Faites chauffer une  cr\u00eapi\u00e8re ou une large po\u00eale \u00e0 fond \u00e9pais sur feu vif. Attendez qu'elle soit tr\u00e8s chaude (si vous faites tomber une goutte d'eau dessus, elle doit gr\u00e9siller). Pliez deux feuilles de papier absorbant pour former un tampon. Trempez-le dans un ramequin contenant un fond d'huile, et huilez la po\u00eale sans exc\u00e8s, en faisant bien attention \u00e0 ne pas vous br\u00fbler.\r<\/li><li id=\"zlrecipe-instruction-5\" class=\"instruction\" itemprop=\"recipeInstructions\">Versez la valeur d'une petite louche de p\u00e2te dans la po\u00eale, juste assez pour en recouvrir finement le fond, et inclinez la po\u00eale en un large mouvement circulaire pour bien \u00e9taler la p\u00e2te. Laissez cuire 1 \u00e0 2 minutes, le temps que les bords commencent \u00e0 dorer et \u00e0 se recroqueviller l\u00e9g\u00e8rement. Passez le bout d'une spatule rigide tout autour de la cr\u00eape pour la d\u00e9coller, jetez un \u0153il en-dessous et retournez-la quand vous constatez qu'elle a bien dor\u00e9. Disposez la garniture sur la galette et laissez cuire 1 minute de plus sur l'autre face, le temps qu'elle dore aussi. Rabattez les c\u00f4t\u00e9s de la galette sur la garniture, puis faites glisser dans un plat \u00e0 gratin ou sur une l\u00e8che-frite l\u00e9g\u00e8rement huil\u00e9e, que vous mettrez au four pour tenir au chaud.
