Enveloppez-la bien dans du film plastique (ou dans le papier du boucher) et mettez au frais pendant une heure au moins, ou toute une nuit.\r<\/li><li id=\"zlrecipe-instruction-1\" class=\"instruction\" itemprop=\"recipeInstructions\">Retirez la viande du r\u00e9frig\u00e9rateur 30 minutes avant de la cuire. Pr\u00e9chauffez le four \u00e0 120\u00b0C. S\u00e9parez toutes les gousses formant la t\u00eate d'ail, mais sans les \u00e9plucher.\r<\/li><li id=\"zlrecipe-instruction-2\" class=\"instruction\" itemprop=\"recipeInstructions\">Placez la viande dans une casserole \u00e0 fond \u00e9pais disposant d'un couvercle herm\u00e9tique (le mieux est d'utiliser une cocotte en fonte). Assaisonnez la viande de sel et de poivre, disposez les gousses d'ail tout autour et versez le vin dans la cocotte. Couvrez et enfournez.\r<\/li><li id=\"zlrecipe-instruction-3\" class=\"instruction\" itemprop=\"recipeInstructions\">Laissez cuire pendant 4 heures, en retournant la viande et en l'arrosant de son propre jus toutes les heures environ. Si vous n'avez pas suffisamment de jus (ce qui peut arriver si le couvercle de votre casserole n'est pas assez herm\u00e9tique), rajoutez un peu de vin ou d'eau. La viande est pr\u00eate lorsqu'elle est brun fonc\u00e9 et bien fondante. Rincez et \u00e9gouttez.\r<\/li><li id=\"zlrecipe-instruction-1\" class=\"instruction\" itemprop=\"recipeInstructions\">Faites chauffer un peu d'huile d'olive dans une casserole \u00e0 fond \u00e9pais de taille moyenne. Ajoutez les flageolets et les oignons, puis laissez cuire pendant 15 minutes, tout en remuant r\u00e9guli\u00e8rement jusqu'\u00e0 ce que les oignons soient tendres.\r<\/li><li id=\"zlrecipe-instruction-2\" class=\"instruction\" itemprop=\"recipeInstructions\">Versez le bouillon froid (ou de l'eau froide + un bouillon cube) pour recouvrir les flageolets et laissez-les mijoter pendant 40 \u00e0 50 minutes, ou jusqu'\u00e0 ce qu'ils soient tendres, mais gardent encore leur forme.
