{"id":3474,"date":"2010-10-05T15:34:50","date_gmt":"2010-10-05T13:34:50","guid":{"rendered":"https:\/\/cnz.to\/vf\/uncategorized\/croquants-sales-au-sesame-recette\/"},"modified":"2015-11-30T15:31:13","modified_gmt":"2015-11-30T14:31:13","slug":"croquants-sales-au-sesame-recette","status":"publish","type":"post","link":"https:\/\/cnz.to\/vf\/recettes\/amuse-bouche\/croquants-sales-au-sesame-recette\/","title":{"rendered":"Croquants sal\u00e9s au s\u00e9same Recette"},"content":{"rendered":"<p><img loading=\"lazy\" class=\"photo\" alt=\"Savory Sesame Cookies\" src=\"https:\/\/cnz.to\/archives\/images\/appetizers\/sablessesame.jpg\" width=\"372\" height=\"247\" \/><\/p>\n<p>Dans la blogosph\u00e8re culinaire fran\u00e7aise, on ne pr\u00e9sente plus <strong>Clea<\/strong> : elle a cr\u00e9\u00e9 son blog <a href=\"http:\/\/www.cleacuisine.fr\/\">Clea Cuisine<\/a> en 2005 du Japon, o\u00f9 elle habitait alors, avant de revenir habiter dans le sud-est de la France, et son style unique a vite fait d&rsquo;elle une r\u00e9f\u00e9rence.<\/p>\n<p>Je la lis depuis un bon moment &#8212; je me souviens de ses premiers billets sur les g\u00e2teaux cuits <a href=\"http:\/\/www.cleacuisine.fr\/gateaux\/d-tournement-de-cuiseur-riz\/\">au rice cooker<\/a>, les <a href=\"http:\/\/www.cleacuisine.fr\/sur-le-japon\/bugnes-party\/\">cours de bugnes<\/a> donn\u00e9s aux membres de son club de fran\u00e7ais, et les <a href=\"http:\/\/www.cleacuisine.fr\/sur-le-japon\/bento-gentil-pour-le-corps\/\">ekiben<\/a> (bento ferroviaires) mang\u00e9s dans le train &#8212; et j&rsquo;aime toujours autant l&rsquo;<strong>inspiration tranquille<\/strong> qui \u00e9mane de sa cuisine, simple et bio.<\/p>\n<p>Clea est aussi un auteur prolifique, dont les <strong>livres de cuisine<\/strong> sont publi\u00e9s chez <a href=\"http:\/\/laplage.fr\/\">La Plage<\/a>, un \u00e9diteur ind\u00e9pendant qui se sp\u00e9cialise dans les modes de vie alternatifs et la cuisine v\u00e9g\u00e9tarienne.<\/p>\n<p><a href=\"http:\/\/www.amazon.fr\/dp\/2842212223?tag=chocolzucchi-21\"><img loading=\"lazy\" src=\"https:\/\/cnz.to\/archives\/images\/books\/croquezsale.jpg\" width=\"185\" height=\"250\" class=\"right\"><\/a>L&rsquo;une de ses derni\u00e8res parutions s&rsquo;intitule <a href=\"http:\/\/www.amazon.fr\/dp\/2842212223?tag=chocolzucchi-21\">Croquez sal\u00e9<\/a>, et c&rsquo;est un tr\u00e8s joli recueil de recettes de <strong>biscuits sal\u00e9s et autres crackers<\/strong> \u00e0 grignoter dans l&rsquo;apr\u00e8s-midi, \u00e0 glisser dans sa bo\u00eete-repas, ou \u00e0 servir \u00e0 l&rsquo;ap\u00e9ritif. La cat\u00e9gorie des biscuits sal\u00e9s re\u00e7oit rarement toute l&rsquo;attention qu&rsquo;elle m\u00e9rite, et Clea s&rsquo;efforce de changer \u00e7a en proposant presque trente recettes qui sont \u00e0 la fois originales et faciles.<\/p>\n<p>J&rsquo;ai tout de suite jet\u00e9 mon d\u00e9volu sur les <b>Petits croquants au s\u00e9same<\/b> de la page 54. La recette fait appel \u00e0 des ingr\u00e9dients qu&rsquo;on peut sans peine garder sous la main pour une fourn\u00e9e impromptue &#8212; pur\u00e9e de s\u00e9same, gomasio, graines de s\u00e9same, farine, un oeuf &#8212; et utilise la m\u00e9thode dite du boudin tranch\u00e9 (en anglais on dit <i>slice-and-bake<\/i>, c&rsquo;est plus \u00e9l\u00e9gant) qui est de loin ma pr\u00e9f\u00e9r\u00e9e.<\/p>\n<p>Je ne modifie que deux petites choses \u00e0 la recette de Clea : j&rsquo;utilise du <b>tahini<\/b> (une pur\u00e9e de s\u00e9same d\u00e9cortiqu\u00e9, et non semi-compl\u00e8te) parce que c&rsquo;est ce que j&rsquo;ach\u00e8te g\u00e9n\u00e9ralement, et je presse les dents d&rsquo;une fourchette sur les ronds de p\u00e2te crue pour cr\u00e9er un peu plus de <b>relief<\/b>.<\/p>\n<p>Ces biscuits sont croustillants et d\u00e9licieusement parfum\u00e9s, et se marient bien avec quelques <b>radis<\/b> \u00e0 l&rsquo;heure de l&rsquo;ap\u00e9ro. J&rsquo;en ai aussi tartin\u00e9s quelques-uns avec du <strong>fromage frais<\/strong> pour accompagner une salade verte, et ils sont bien utiles pour faire \u00ab\u00a0pause\u00a0\u00bb sur notre app\u00e9tit quand la pr\u00e9paration du d\u00eener prend plus longtemps que pr\u00e9vu.<\/p>\n<p>[Quelques crackers et biscuits sal\u00e9s issus des archives :<br \/>\n~ <a href=\"https:\/\/cnz.to\/vf\/2010\/09\/crackers_crus_multigraines.php\" target=\"_self\">Crackers crus multigraines<\/a>,<br \/>\n~ <a href=\"https:\/\/cnz.to\/vf\/2010\/08\/crackers_a_lhuile_dolive_et_aux_graines.php\" target=\"_self\">Crackers \u00e0 l&rsquo;huile d&rsquo;olive et aux graines<\/a>,<br \/>\n~ <a href=\"https:\/\/cnz.to\/vf\/2009\/08\/croustilles_au_fromage.php\" target=\"_self\">Croustilles au fromage<\/a>,<br \/>\n~ <a href=\"https:\/\/cnz.to\/vf\/2007\/10\/mini-scones_a_la_carotte_et_au_romarin.php\" target=\"_self\">Mini-Scones \u00e0 la carotte et au romarin<\/a>,<br \/>\n~ <a href=\"https:\/\/cnz.to\/vf\/2006\/11\/scones_au_gouda_vieux_et_poires_sechees.php\" target=\"_self\">Scones au gouda vieux et poires s\u00e9ch\u00e9es<\/a>.]<\/p>\n<p><!--more--><\/p>\n<p><b>Croquants sal\u00e9s au s\u00e9same<\/b><\/p>\n<p>&#8211; 80 g de <b>tahini<\/b> ou de <b>pur\u00e9e de s\u00e9same<\/b> semi-compl\u00e8te<br \/>\n&#8211; 60 g de <b>farine<\/b> de bl\u00e9 T80<br \/>\n&#8211; 2 c.c. de <b>gomasio<\/b><br \/>\n&#8211; 4 c.c. de <b>graines de s\u00e9same<\/b> blond grill\u00e9es \u00e0 sec<br \/>\n&#8211; 1 <b>oeuf<\/b><\/p>\n<p><i>Pour deux douzaines de sabl\u00e9s.<\/i><\/p>\n<p>Dans un saladier, m\u00e9langez du bout des doigts ou \u00e0 la fourchette la pur\u00e9e de s\u00e9same, la farine, le gomasio et les graines de s\u00e9same.<\/p>\n<p>Ajoutez l&rsquo;\u0153uf et m\u00e9langez jusqu&rsquo;\u00e0 ce que la p\u00e2te s&rsquo;amalgame et forme une boule. La p\u00e2te doit \u00eatre souple mais pas collante. Ajoutez un peu d&rsquo;eau si elle est trop s\u00e8che, ou un peu de farine si elle est trop humide.<\/p>\n<p>Divisez la p\u00e2te en deux et formez deux boudins d&rsquo;environ 4 cm de diam\u00e8tre. Mettez au r\u00e9frig\u00e9rateur 1h environ pour raffermir.<\/p>\n<p>Pr\u00e9chauffez le four \u00e0 180\u00b0C et chemisez une plaque de four de papier sulfuris\u00e9 ou d&rsquo;une feuille de cuisson en silicone. D\u00e9coupez les boudins en tranches d&rsquo;environ 1 cm d&rsquo;\u00e9paisseur. Disposez-les sur la plaque (elles ne s&rsquo;\u00e9taleront pas beaucoup \u00e0 la cuisson) et pressez les dents d&rsquo;une fourchette sur chaque rond de p\u00e2te pour lui donner du relief.<\/p>\n<p>Enfournez 15 min, jusqu&rsquo;\u00e0 ce que les biscuits soient pris. Laissez refroidir compl\u00e8tement avant de servir.
