{"id":3469,"date":"2005-10-03T19:18:40","date_gmt":"2005-10-03T17:18:40","guid":{"rendered":"https:\/\/cnz.to\/vf\/uncategorized\/caneles-recette\/"},"modified":"2016-03-16T11:33:16","modified_gmt":"2016-03-16T10:33:16","slug":"caneles-recette","status":"publish","type":"post","link":"https:\/\/cnz.to\/vf\/recettes\/biscuits-et-petits-gateaux\/caneles-recette\/","title":{"rendered":"Canel\u00e9s bordelais Recette"},"content":{"rendered":"<p>Ah, le <b>canel\u00e9 bordelais<\/b>, cette merveilleuse sp\u00e9cialit\u00e9 dont la cro\u00fbte est si divinement croustillante, et le coeur si moelleux ! <\/p>\n<p>Le canel\u00e9 de Bordeaux (ou cannel\u00e9) se cuit traditionnellement dans des <a href=\"http:\/\/www.amazon.fr\/dp\/B001FWRYAQ?tag=chocolzucchi-21\">moules en cuivre<\/a>, mais c&rsquo;est un peu cher et un peu fastidieux \u00e0 graisser, donc pour un usage occasionnel on pr\u00e9f\u00e8rera des <a href=\"http:\/\/www.amazon.fr\/dp\/B001CFGQJQ?tag=chocolzucchi-21\">moules en silicone<\/a> de bonne qualit\u00e9.<\/p>\n<p>Les canel\u00e9s bordelais se conservent bien, et m\u00eame leur saveur de vanille m\u00fbrit joliment avec le temps, mais la cro\u00fbte se ramollit un peu. Au-del\u00e0 de premier jour donc, vous pouvez \u00ab\u00a0rafra\u00eechir\u00a0\u00bb vos canel\u00e9s bordelais \u00e0 four chaud pendant quelques minutes. Une fois refroidis, ils retrouveront leur texture d&rsquo;origine.<\/p>\n<p>Cette recette est <b>facile<\/b>, d\u00e9taill\u00e9e et soigneusement test\u00e9e. Cassez les \u0153ufs dans un autre saladier et battez-les l\u00e9g\u00e8rement.\r<\/li><li id=\"zlrecipe-instruction-2\" class=\"instruction\" itemprop=\"recipeInstructions\">Lorsque le lait commence \u00e0 bouillir, retirez la casserole du feu, enlevez la gousse de vanille et r\u00e9servez. Laissez ti\u00e9dir 15 minutes.\r<\/li><li id=\"zlrecipe-instruction-3\" class=\"instruction\" itemprop=\"recipeInstructions\">Versez les \u0153ufs battus dans les ingr\u00e9dients secs (ne m\u00e9langez pas encore), versez-y le lait et m\u00e9langez jusqu'\u00e0 ce que le tout soit bien homog\u00e8ne, sans fouetter.\r<\/li><li id=\"zlrecipe-instruction-4\" class=\"instruction\" itemprop=\"recipeInstructions\">Raclez les graines de la gousse de vanille \u00e0 l'aide d'un couteau, puis ajoutez la gousse et les graines au m\u00e9lange obtenu. Ajoutez le rhum et m\u00e9langez bien.\r<\/li><li id=\"zlrecipe-instruction-5\" class=\"instruction\" itemprop=\"recipeInstructions\">Laissez refroidir jusqu'\u00e0 temp\u00e9rature ambiante, puis couvrez et r\u00e9frig\u00e9rez entre 24 heures et 72 heures.\r<\/li><li id=\"zlrecipe-instruction-6\" class=\"instruction\" itemprop=\"recipeInstructions\">Le lendemain (ou le surlendemain ou le jour d'apr\u00e8s), pr\u00e9chauffez le four \u00e0 250\u00b0 C. \r<\/li><li id=\"zlrecipe-instruction-7\" class=\"instruction\" itemprop=\"recipeInstructions\">Beurrez soigneusement les moules \u00e0 canel\u00e9s <a href=\"http:\/\/www.amazon.fr\/dp\/B001FWRYAQ?tag=chocolzucchi-21\">s'ils sont en cuivre<\/a> (ce n'est pas n\u00e9cessaire <a href=\"http:\/\/www.amazon.fr\/dp\/B001CFGQJQ?tag=chocolzucchi-21\">s'ils sont en silicone<\/a>).\r<\/li><li id=\"zlrecipe-instruction-8\" class=\"instruction\" itemprop=\"recipeInstructions\">Sortez la p\u00e2te du r\u00e9frig\u00e9rateur et m\u00e9langez-la \u00e0 nouveau. Versez dans les moules en les remplissant presque \u00e0 ras bord. Enfournez et laissez cuire pendant 20 minutes, puis (sans ouvrir la porte du four) r\u00e9duisez la temp\u00e9rature \u00e0 200\u00b0 C et laissez cuire pendant encore 40 \u00e0 60 minutes (en fonction de votre four et de la fa\u00e7on dont vous aimez vos canel\u00e9s).\r<\/li><li id=\"zlrecipe-instruction-9\" class=\"instruction\" itemprop=\"recipeInstructions\">Les canel\u00e9s sont pr\u00eats lorsque leur base est tr\u00e8s fonc\u00e9e, mais pas brul\u00e9e.
