C&rsquo;est un plat qui consiste juste \u00e0 faire cuire des pommes de terre au four dans du lait et\/ou de la cr\u00e8me &#8212; on y reviendra dans un instant &#8212; et qui se pare d&rsquo;une fine cro\u00fbte brun dor\u00e9 gr\u00e2ce \u00e0 l&rsquo;amidon des pommes de terre. L&rsquo;astuce, c&rsquo;est de commencer par pr\u00e9-cuire les tranches de pommes de terre quelques minutes \u00e0 la casserole, jusqu&rsquo;\u00e0 ce que le lait \u00e9paississe et les enrobe bien : on r\u00e9duit alors le temps total de cuisson, et on est s\u00fbr d&rsquo;avoir des pommes de terre bien fondantes.<\/p>\n<p><img loading=\"lazy\" class=\"alignnone size-full wp-image-11432\" src=\"https:\/\/cnz.to\/vf\/wp-content\/uploads\/2009\/06\/Gratin-dauphinois-6.jpg\" alt=\"Gratin dauphinois\" width=\"760\" height=\"1140\" style=\"width:100%\" srcset=\"https:\/\/cnz.to\/vf\/wp-content\/uploads\/2009\/06\/Gratin-dauphinois-6.jpg 760w, https:\/\/cnz.to\/vf\/wp-content\/uploads\/2009\/06\/Gratin-dauphinois-6-200x300.jpg 200w, https:\/\/cnz.to\/vf\/wp-content\/uploads\/2009\/06\/Gratin-dauphinois-6-507x760.jpg 507w\" sizes=\"(max-width: 760px) 100vw, 760px\" \/><\/p>\n<p>Sans surprise, je parfume le gratin d&rsquo;un peu de <b>noix de muscade<\/b> pour lui donner de la profondeur, mais je ne mets pas de poivre, parce que je pr\u00e9f\u00e8re l&rsquo;ajouter, fra\u00eechement moulu, \u00e0 table. J&rsquo;ai servi celui qui est en photo ci-dessus \u00e0 des amis venus d\u00eener la semaine derni\u00e8re. (Au robot ou \u00e0 la mandoline, \u00e7a fait gagner du temps.) Ne les rincez surtout pas apr\u00e8s les avoir coup\u00e9es ; vous perdriez tout ce bel amidon.\r<\/li><li id=\"zlrecipe-instruction-1\" class=\"instruction\" itemprop=\"recipeInstructions\">Mettez les pommes de terre, le lait, le sel et une bonne dose de muscade (mais pas trop quand m\u00eame) dans une casserole. Amenez \u00e0 fr\u00e9missement sur feu mod\u00e9r\u00e9 et laissez fr\u00e9mir 8 minutes en remuant r\u00e9guli\u00e8rement et en raclant bien le fond de la casserole \u00e0 chaque fois pour \u00e9viter que \u00e7a n'attache. Le lait va progressivement \u00e9paissir.\r<\/li><li id=\"zlrecipe-instruction-2\" class=\"instruction\" itemprop=\"recipeInstructions\">Pendant ce temps, faites pr\u00e9chauffer le four \u00e0 220\u00b0C et frottez d'ail le fond et les bords d'un plat \u00e0 gratin (le mien est ovale, il mesure 26 cm au plus large, et a une contenance de 2 litres).\r<\/li><li id=\"zlrecipe-instruction-3\" class=\"instruction\" itemprop=\"recipeInstructions\">Mettez la moiti\u00e9 des pommes de terre dans le plat, saupoudrez de ciboulette et versez la moiti\u00e9 de la cr\u00e8me en filet. Ajoutez le reste des pommes de terre, le lait qui reste dans la casserole, et le reste de la cr\u00e8me.\r<\/li><li id=\"zlrecipe-instruction-4\" class=\"instruction\" itemprop=\"recipeInstructions\">Mettez au four 35 \u00e0 40 minutes, jusqu'\u00e0 ce que le gratin soit fr\u00e9missant et brun-dor\u00e9.
