{"id":3349,"date":"2009-01-13T12:43:07","date_gmt":"2009-01-13T11:43:07","guid":{"rendered":"https:\/\/cnz.to\/vf\/uncategorized\/pour-des-oeufs-durs-parfaits-recette\/"},"modified":"2014-03-28T15:56:00","modified_gmt":"2014-03-28T14:56:00","slug":"pour-des-oeufs-durs-parfaits-recette","status":"publish","type":"post","link":"https:\/\/cnz.to\/vf\/recettes\/oeufs\/pour-des-oeufs-durs-parfaits-recette\/","title":{"rendered":"Pour Des Oeufs durs parfaits Recette"},"content":{"rendered":"<p>Cette recette me vient du livre de recettes de David Tanis, <a href=\"http:\/\/www.amazon.fr\/dp\/1579653464?tag=chocolzucchi-21\">A Platter of Figs and Other Recipes<\/a> (\u00ab\u00a0un plateau de figues et autres recettes\u00a0\u00bb).<\/p>\n<p>Dans la mesure o\u00f9 j&rsquo;ai d\u00e9sign\u00e9 ce livre comme mon <a href=\"https:\/\/cnz.to\/vf\/2008\/12\/le_meilleur_de_2008.php\" target=\"_self\">pr\u00e9f\u00e9r\u00e9 pour l&rsquo;ann\u00e9e 2008<\/a>, je suis consciente qu&rsquo;en tirer une recette aussi \u00e9l\u00e9mentaire est inattendu, et pourtant \u00e7a illustre parfaitement ce que je recherche dans un livre de cuisine : des textes bien \u00e9crits, des photos belles mais r\u00e9alistes, et des menus qui respectent les saisons &#8212; toutes qualit\u00e9s que l&rsquo;on retrouve dans <a href=\"http:\/\/www.amazon.fr\/dp\/1579653464?tag=chocolzucchi-21\">celui-ci<\/a> &#8212; mais aussi, et surtout, des <b>choses \u00e0 apprendre<\/b> et comprendre, qui me resteront bien apr\u00e8s que j&rsquo;ai referm\u00e9 le livre.<\/p>\n<p><a href=\"http:\/\/www.amazon.fr\/dp\/1579653464?tag=chocolzucchi-21\"><img loading=\"lazy\" src=\"https:\/\/cnz.to\/vf\/wp-content\/uploads\/2009\/01\/platter_of_figs.jpg\" alt=\"A Platter of Figs\" width=\"298\" height=\"400\" class=\"alignleft size-full wp-image-4248\" srcset=\"https:\/\/cnz.to\/vf\/wp-content\/uploads\/2009\/01\/platter_of_figs.jpg 298w, https:\/\/cnz.to\/vf\/wp-content\/uploads\/2009\/01\/platter_of_figs-223x300.jpg 223w, https:\/\/cnz.to\/vf\/wp-content\/uploads\/2009\/01\/platter_of_figs-252x337.jpg 252w\" sizes=\"(max-width: 298px) 100vw, 298px\" \/><\/a>Ce n&rsquo;est donc pas \u00e9tonnant que je sois sensible au charme d&rsquo;un livre dont le titre fait justement allusion \u00e0 \u00e7a : servir un bon plateau de figues demande du savoir-faire, et non une recette. Un livre qui non seulement propose une recette de poulet en gel\u00e9e (vive les <a href=\"https:\/\/cnz.to\/archives\/2006\/02\/egg_in_aspic.php\" target=\"_self\">aspics<\/a>), mais consacre deux pages \u00e0 la cuisson du blanc de poulet, et donne des instructions pr\u00e9cises pour obtenir les <b>oeufs durs au coeur moelleux<\/b> que l&rsquo;on disposera, coup\u00e9s en moiti\u00e9s ou en quartiers, autour de la terrine d\u00e9moul\u00e9e.<\/p>\n<p>Si comme moi vous avez toujours honni les oeufs durs, pr\u00e9parez-vous \u00e0 changer d&rsquo;avis. Si on les pr\u00e9pare correctement, comme indiqu\u00e9 ci-dessous, on \u00e9vite l&rsquo;\u00e9cueil des jaunes dess\u00e9ch\u00e9s aux cernes verd\u00e2tres, pour obtenir \u00e0 la place <b>des jaunes cr\u00e9meux \u00e0 la mine radieuse,<\/b> bien assis dans des blancs souples et cuits \u00e0 point.<\/p>\n<p>La m\u00e9thode n&rsquo;a en soi rien de r\u00e9volutionnaire, mais c&rsquo;est le genre de <b>technique basique<\/b> que tout le monde est cens\u00e9 ma\u00eetriser, alors que je suis personnellement incapable de faire des <a href=\"https:\/\/cnz.to\/archives\/2004\/10\/softboiled_egg_red_pesto_bread_fingers.php\" target=\"_self\">oeufs \u00e0 la coque<\/a> sans demander d&rsquo;abord \u00e0 Maxence de me confirmer le temps de cuisson requis. C&rsquo;est donc particuli\u00e8rement appr\u00e9ciable quand quelqu&rsquo;un se propose de vous tenir la main pour vous faire traverser.<\/p>\n<blockquote class=\"pullquote alignright\">\n<p>\t\t\tSi comme moi vous avez toujours honni les oeufs durs, pr\u00e9parez-vous \u00e0 changer d&rsquo;avis.\n\t\t<\/p><\/blockquote>\n<p><b>MISE A JOUR :<\/b> La m\u00e9thode de David Tanis consiste \u00e0 plonger les oeufs dans l&rsquo;eau bouillante et les faire cuire 8 \u00e0 9 minutes. J&rsquo;ai depuis chang\u00e9 de fa\u00e7on de faire, et je pr\u00e9f\u00e8re maintenant mettre les oeufs dans l&rsquo;eau froide, amener l&rsquo;eau \u00e0 \u00e9bullition, et les laisser deposer 10 minutes hors du feu. J&rsquo;ai mis \u00e0 jour la recette ci-dessous pour refl\u00e9ter ce changement.<\/p>\n<p>Ensuite, vous pouvez faire de ces oeufs <strong>ce qu&rsquo;il vous chante<\/strong>. Couvrez et ammenez \u00e0 vive \u00e9bullition, puis retirez du feu et laissez reposer 10 minutes.\r<\/li><li id=\"zlrecipe-instruction-1\" class=\"instruction\" itemprop=\"recipeInstructions\">Pendant que les oeufs cuisent, remplissez un bol d'eau froide et ajoutez-y quelques gla\u00e7ons.\r<\/li><li id=\"zlrecipe-instruction-2\" class=\"instruction\" itemprop=\"recipeInstructions\">D\u00e8s que le minuteur retentit, retirez les oeufs \u00e0 l'aide d'une \u00e9cumoire (j'utilise ma passoire sp\u00e9ciale) et mettez-les dans l'eau glac\u00e9e ; ceci permet d'arr\u00eater net la cuisson.\r<\/li><li id=\"zlrecipe-instruction-3\" class=\"instruction\" itemprop=\"recipeInstructions\">Lorsque les oeufs sont froids -- cela prendra quelques minutes \u00e0 peine -- tapez-les doucement sur le plan de travail pour craqueler leur coquille tout autour, et remettez-les dans le bol : l'eau va s'infiltrer sous la coquille et la rendre plus facile \u00e0 \u00e9caler. (En \u00e9calant les oeufs, vous remarquerez une fine peau entre le blanc et la coquille ; une fois trouv\u00e9e et perc\u00e9e, cette peau donne meilleure prise pour retirer la coquille.)\r<\/li><\/ol><p id=\"zlrecipe-notes\" class=\"h-4 strong\">Notes<\/p><div id=\"zlrecipe-notes-list\"><p class=\"notes\">Si vous n'utilisez pas les six oeufs imm\u00e9diatement, ne craquelez pas ceux que vous voulez garder pour plus tard.
