Que c&rsquo;est facile, amusant, et vraiment tr\u00e8s bon ?<\/p>\n<p>Je savais plus ou moins, mais je n&rsquo;avais jamais essay\u00e9 avant de trouver une recette de <b>moutarde \u00e0 l&rsquo;ancienne ferment\u00e9e<\/b> dans lexcellent petit livre de Marie-Claire Fr\u00e9d\u00e9ric qui s&rsquo;appelle <a href=\"http:\/\/www.amazon.fr\/dp\/207264349X?tag=chocolzucchi-21\">Aliments ferment\u00e9s, aliments sant\u00e9<\/a>.<\/p>\n<p><!--more--><\/p>\n<p><img loading=\"lazy\" class=\"alignnone size-full wp-image-11225\" src=\"https:\/\/cnz.to\/vf\/wp-content\/uploads\/2018\/05\/fermented_mustard.jpg\" alt=\"Moutarde \u00e0 l'ancienne ferment\u00e9e\" width=\"760\" height=\"1140\" style=\"width:100%\" srcset=\"https:\/\/cnz.to\/vf\/wp-content\/uploads\/2018\/05\/fermented_mustard.jpg 760w, https:\/\/cnz.to\/vf\/wp-content\/uploads\/2018\/05\/fermented_mustard-200x300.jpg 200w, https:\/\/cnz.to\/vf\/wp-content\/uploads\/2018\/05\/fermented_mustard-507x760.jpg 507w\" sizes=\"(max-width: 760px) 100vw, 760px\" \/><\/p>\n<p>Cette recette permet donc de faire de la moutarde dans laquelle on distingue encore les graines de moutarde. C&rsquo;est souvent celle qui est servie au restaurant parce qu&rsquo;elle a une texture agr\u00e9able, un peu granuleuse, et qu&rsquo;elle fait plus sophistiqu\u00e9e.<\/p>\n<p>Dans cette recette, on la pr\u00e9pare vraiment \u00e0 l&rsquo;ancienne en faisant <b>fermenter les graines de moutarde<\/b> pendant cinq jours, ce qui permet de d\u00e9velopper leur saveur et, bien s\u00fbr, tous les bons probiotiques que les aliments ferment\u00e9s nous offrent.<\/p>\n<p>Ensuite, il suffit d&rsquo;\u00e9goutter les graines de moutarde ferment\u00e9es et de les mixer avec du vinaigre de cidre ou du vinaigre de vin blanc, et hop ! Sans plus d&rsquo;effort, vous avez une moutarde ferment\u00e9e faite maison qui a toutes les qualit\u00e9s de la moutarde achet\u00e9e toute faite, avec une <b>profondeur de saveur<\/b> suppl\u00e9mentaire gr\u00e2ce \u00e0 la fermentation. (Apr\u00e8s 48h, le m\u00e9lange deviendra effervescent ; c\u2019est normal.)\r<\/li><li id=\"zlrecipe-instruction-4\" class=\"instruction\" itemprop=\"recipeInstructions\">Mixez les graines de moutarde \u00e0 l\u2019aide d\u2019un blender ou d\u2019un mixeur jusqu\u2019\u00e0 obtenir une pur\u00e9e plus ou moins grossi\u00e8re. Ajoutez le vinaigre et mixez encore.\r<\/li><li id=\"zlrecipe-instruction-5\" class=\"instruction\" itemprop=\"recipeInstructions\">Nettoyez soigneusement 2 pots en verre ou en gr\u00e8s de 200 ml avec couvercle, et r\u00e9partissez la moutarde dedans.
