{"id":11236,"date":"2024-07-04T09:00:29","date_gmt":"2024-07-04T07:00:29","guid":{"rendered":"https:\/\/cnz.to\/vf\/?p=11236"},"modified":"2024-06-30T08:17:38","modified_gmt":"2024-06-30T06:17:38","slug":"pissaladiere-recette","status":"publish","type":"post","link":"https:\/\/cnz.to\/vf\/recettes\/entrees\/pissaladiere-recette\/","title":{"rendered":"Pissaladi\u00e8re Recette"},"content":{"rendered":"<p>La pissaladi\u00e8re est <strong>une sp\u00e9cialit\u00e9 de Nice<\/strong> : c&rsquo;est une tarte fine \u00e0 l&rsquo;oignon garnie d&rsquo;olives noires et d&rsquo;anchois, cuite sur une p\u00e2te \u00e0 pain assez fine.<\/p>\n<p>Savez-vous d&rsquo;o\u00f9 vient le nom de cette tarte ? \u00c7a vient de <b><I>pissalat<\/I><\/b>, un condiment proven\u00e7al aux racines lointaines \u00e0 base de pur\u00e9e d&rsquo;anchois, de clous de girofle, de thym et de feuilles de laurier, qu&rsquo;\u00e0 l&rsquo;origine on \u00e9talait sur la p\u00e2te avant cuisson. Il me semble que c&rsquo;est assez rare de nos jours de pr\u00e9parer ce condiment ; les pissaladi\u00e8res contemporaines sont plus souvent couronn\u00e9es d&rsquo;anchois en filets, comme je vous le pr\u00e9sente ici.<\/p>\n<p><!--more--><\/p>\n<p><img loading=\"lazy\" class=\"alignnone size-full wp-image-11214\" src=\"https:\/\/cnz.to\/vf\/wp-content\/uploads\/2018\/05\/pissaladiere-8.jpg\" alt=\"Pissaladi\u008f\u00e8re\" width=\"760\" height=\"1140\" style=\"width:100%\" srcset=\"https:\/\/cnz.to\/vf\/wp-content\/uploads\/2018\/05\/pissaladiere-8.jpg 760w, https:\/\/cnz.to\/vf\/wp-content\/uploads\/2018\/05\/pissaladiere-8-200x300.jpg 200w, https:\/\/cnz.to\/vf\/wp-content\/uploads\/2018\/05\/pissaladiere-8-507x760.jpg 507w\" sizes=\"(max-width: 760px) 100vw, 760px\" \/><\/p>\n<p><strong>Ma grand-m\u00e8re paternelle<\/strong> \u00e9tait originaire du Nord de la France, mais elle a v\u00e9cu dans le Midi une bonne partie de sa vie : \u00e0 Marseille quand elle \u00e9tait jeune mari\u00e9e, puis \u00e0 Vence quand mon grand-p\u00e8re a pris sa retraite. (C&rsquo;est pour cela qu&rsquo;on l&rsquo;appelait Mamy du Midi &#8212; en un seul mot, <i>mamidumidi<\/i>, quand on a moins de cinq ans &#8212; pour la distinguer de Mamie Colette, la m\u00e8re de ma m\u00e8re.) Versez l\u2019eau ti\u00e9die dans la fontaine, ajoutez la levure boulang\u00e8re d\u00e9shydrat\u00e9e, et laissez reposer 5 minutes.\r<\/li><li id=\"zlrecipe-instruction-2\" class=\"instruction\" itemprop=\"recipeInstructions\">Ajoutez le sel, le romarin et l\u2019huile, et m\u00e9langez \u00e0 la fourchette pour obtenir une p\u00e2te homog\u00e8ne. P\u00e9trissez sur un plan de travail propre ou dans un robot-p\u00e9trin jusqu\u2019\u00e0 obtenir une p\u00e2te lisse et \u00e9lastique, environ 8 minutes au robot et 12 \u00e0 15 minutes \u00e0 la main.\r<\/li><li id=\"zlrecipe-instruction-3\" class=\"instruction\" itemprop=\"recipeInstructions\">Mettez la p\u00e2te en boule.\r<\/li><li id=\"zlrecipe-instruction-4\" class=\"instruction\" itemprop=\"recipeInstructions\">Nettoyez le saladier, huilez-le l\u00e9g\u00e8rement, et mettez-y la boule de p\u00e2te. Couvrez d\u2019un torchon et laissez lever \u00e0 temp\u00e9rature ambiante pendant 1 heure.\r<\/li><li id=\"zlrecipe-instruction-5\" class=\"instruction\" itemprop=\"recipeInstructions\">Pendant ce temps, pr\u00e9parez la fondue d\u2019oignon.\r<\/li><li id=\"zlrecipe-instruction-6\" class=\"instruction\" itemprop=\"recipeInstructions\">Faites chauffer la c.s. d\u2019huile dans une sauteuse. Ajoutez les oignons \u00e9minc\u00e9s et le sel. Couvrez, passez sur feu doux et laissez cuire 30 minutes en remuant de temps en temps, jusqu\u2019\u00e0 ce que les oignons soient fondants et translucides.\r<\/li><li id=\"zlrecipe-instruction-7\" class=\"instruction\" itemprop=\"recipeInstructions\">Retirez le couvercle, passez sur feu moyen et prolongez la cuisson 5 minutes, en remuant r\u00e9guli\u00e8rement, jusqu\u2019\u00e0 \u00e9vaporation presque compl\u00e8te du jus de cuisson. \r<\/li><li id=\"zlrecipe-instruction-8\" class=\"instruction\" itemprop=\"recipeInstructions\">Pr\u00e9chauffez le four \u00e0 200\u00b0C et chemisez une plaque de papier sulfuris\u00e9.\r<\/li><li id=\"zlrecipe-instruction-9\" class=\"instruction\" itemprop=\"recipeInstructions\">Sur un plan de travail farin\u00e9, \u00e9talez la p\u00e2te en un cercle de 25 cm environ, et d\u00e9posez-la sur la plaque.
